The collection
The kitchen is in-house. Every table setting, counter and service line here was run by our own brigade.
Food is the only part of an evening every guest experiences at the same moment. We schedule the entire night backwards from it.

Service lines are drawn so the last table is served within eleven minutes of the first.

Live counters are not theatre for its own sake — they hold quality that a holding cabinet destroys.
